Sierra Vista Lakefront Dining A warm, friendly, lakefront restaurant in the heart of Tahoe City, which was named for it's superb view of Lake Tahoe and the surrounding basin. We strive to offer a diverse and delicious sampling of flavors from around the world. There's always something new to try at Sierra Vista Lakefront Dining. The Vista is open daily for lunch from 11:30 until 3:00pm and for dinner beginning at 5pm. We also offer a special bar menu all day with happy hour from 3 - 6 daily (holiday periods excluded). SierraVistaTahoe.com Ph 530 583-0233 Fax 530 583-0233 Sierra Vista's Pan Fried Pork Tenderloin From our Chef, David Lambert Servers 2 to 3 people Ingredients: 1 Pork Tenderloin (about 2 lb) Dry Rub Mixture of : Paprika Cayenne Pepper Chipolata Powder Garlic Powder Onion Powder Fine Sea Salt Procedure: Mix 2-3 parts paprika to one part of each of the other ingredients to your taste. Heat a large cast iron pan to med - high heat After pat drying the tenderloin with paper towel, coat it thoroughly with the dry rub mixture In to you pre-heated skillet, add about 1/4" of garlic & olive oil Place the tenderloin in to the skillet once the oil is hot, you're looking for a dark mahogany color, do Not over cook. For med temperature bring internal temperature to 140', for well done 150-155' Finish in oven if necessary After letting the tenderloin rest for a few minutes, slice on a bias and top with the following sauce: Add onions, carrots, celery and garlic to pork stock bring to a boil and let simmer for several hours and strain and save liquid. Reduce liquid over high heat to about 2/3 original volume and add a can of crushed Tomatillos The marriage of the spicy dry rub and the tanginess of the tomatillos should result in a wonderful explosion of flavors.
